1 cup thinly sliced shallots
1 cup chopped fresh cranberries
1 jalapeño, minced
3 scallions, chopped
1 bell pepper, seeded and finely chopped
Juice and zest of 2 to 3 limes
1 cup fresh mint, chopped
1 cup fresh cilantro, chopped
¾ cup sugar
Salt and pepper to taste
Mix all ingredients together in a bowl, and chill. Check seasonings, and serve with tortilla chips.
Yield: 1 cup salsa
