PANNED CATFISH FILETS WITH TABASCO TARTAR SAUCE

This simple dish is delicious served with Tomatoes with Lemon Slices. Add toasted French bread and you are done!

4-6 catfish filets, rinsed and patted dry
1 cup flour seasoned with salt and pepper
1 stick of butter cut into pieces
¼ cup olive oil

Heat butter and olive oil over medium heat. Dredge catfish filets in the seasoned flour and lightly fry until golden in color, about 2-3 minutes per side. Transfer to a warm platter until ready to serve.

TABASCO TARTAR SAUCE

1 cup good-quality mayonnaise
1 tablespoon parsley, chopped
1 tablespoon chives, chopped
1 tablespoon capers
2 tablespoons sweet pickles, chopped
1 green onion, chopped (green and white parts)
¼  teaspoon Dijon mustard
1 tablespoon Tabasco Sauce
Salt and freshly ground pepper
Fresh dill for garnish

Mix all of the ingredients except the dill and refrigerate until ready to use. Sprinkle the chopped dill generously over the sauce before serving.
