This is Grandmother Slay’s famous Spice Cake. She was one of the most generous ladies I have ever known. She made this cake for many friends and neighbors, and she would always give it on a beautiful china plate that they could keep.
Cake:
2 cups sugar
2 cups self-rising flour
2 teaspoons ground cinnamon
1 teaspoon ground cloves
½ teaspoon ground allspice
1 cup vegetable oil
3 eggs
2 (4-ounce) jars baby food puréed plumbs, apples, or pears
Glaze:
2 tablespoons unsalted butter, melted
1 tablespoon orange zest
2 tablespoons fresh orange juice
2 cups confectioners’ sugar
For garnish: fresh orange slices
Preheat oven to 325 degrees. With mixer, combine sugar, flour, cinnamon, cloves, allspice, and oil. Beat in eggs alternately with baby food until well combined. Pour into a greased and floured (10-cup) Bundt pan. Bake for 1 hour or until a tester comes out clean when inserted in center. Remove to a wire rack to cool. For glaze, in a bowl, whisk together butter, orange juice, and sugar. Drizzle over cool cake, and garnish with orange slices.
