Super Food Date “Caramel” Apple Nachos

10 dates 

8 tablespoons butter at room temperature

3 to 4 apples of choice 

1 cup water

½ lemon, juiced

½ cup pomegranate seeds

1 tablespoon bee pollen (optional)

Flaky sea salt

In a bowl of boiling water, soak dates for 10 minutes to soften; reserve liquid. Remove pits and put in a blender with butter. Add 1 to 2 tablespoons of reserved liquid to blend, adding in small increments to avoid overliquifying mixture. Texture should be smooth and creamy, like regular caramel. Once ready, set aside. For apples, slice into wedges or whole apple slices. In a bowl, add ice water and juice of lemon. Mix and add apple slices to avoid browning of apples; soaking for 1 to 2 minutes. Remove and pat dry with a towel. Serve apple slices individually dipped in caramel and topped with pomegranates, bee pollen, and salt, or place date-caramel mixture in a dipping bowl and top with superfoods and salt for dipping apple slices.
