DRESSING

2 tablespoons white wine or apple cider vinegar

Juice and zest of 2 limes

½ cup extra-virgin olive oil

2 tablespoons fresh mint, chopped

Kosher salt and freshly ground black pepper, to taste

In a small bowl, stir white wine vinegar, lime juice, and zest to-gether. Slowly drizzle olive oil in bowl, whisking constantly, until well combined. Gently stir in chopped mint and season with salt and pepper to taste.

Yield: 1 cup

SALAD

1 Granny Smith apple, peeled, cored, and sliced

1 to 2 avocados, peeled, pitted, and sliced

1 English cucumber, peeled, seeded, and sliced

4 to 5 cups mixed salad greens

3 ounces feta cheese, crumbled

Combine apple, avocado, cucumber, and salad greens together. Immediately toss with dressing and sprinkle with feta cheese.

Yield: 6 servings
