BAJA STEAK TACOS WITH GRILLED SPRING ONIONS AND JALAPENO SLAW
1 cup canola oil
1/2 cup Worcestershire sauce
1/4 cup soy sauce
1/4 cup red wine vinegar
2 teaspoons chopped garlic
Zest and juice of 1 lime
1/3 cup cilantro, chopped
1 tablespoon Montreal steak seasoning
2 bunches green onions, cleaned and trimmed but left whole
2 pounds flank steak
1 package (8-inch) flour tortillas
Mix first 8 ingredients together for marinade. Add green onions and flank steak, and marinate for at least 30 minutes or overnight.
JALAPEÑO SLAW
1 1/4 cups mayonnaise
Zest and juice of 1 lime
1/3 cup cilantro, chopped
3 tablespoons chopped jalapenos
Salt and pepper to taste
1 package cole slaw
Combine mayonnaise, lime zest and juice, cilantro, jalapenos, salt, and pepper. Add slaw and mix thoroughly. Refrigerate for at least 30 minutes. Remove flank steak and green onions from marinade and cook on a grill over high heat until steak is medium rare and onions arecooked through. Remove from heat, allowing meat to rest for at least 5 minutes. Slice into -inch-thick slices. On an 8-inch flour tortilla, layer sliced steak with grilled onions, and top with jalapeno slaw.
Yield: 5-6 servings
