Blueberry Muffins

1½ cups all purpose flour

2 teaspoons baking powder

½ teaspoon salt

½ cup cup sugar

1 egg, lightly beaten

½ cup milk

4 tablespoons butter, melted

1 cup blueberries

Sparkling sugar for sprinkling

Preheat oven to 375 degrees. In a bowl, sift together dry ingredients. In a separate bowl, combine egg, milk, and butter. Make a well in center of dry ingredients and pour milk mixture into center. Sir with a fork until moistened. Fold in blueberries and ladle batter into 12 buttered muffin tins or muffin wrappers. Sprinkle each with sparkling sugar. Bake for 20 minutes or until a toothpick inserted comes out clean. Serve warm with butter.

Yield: 12 muffins
