CHICKEN AND BROCCOLINI DIVAN

4 chicken breasts, washed and pounded out ½-inch thick

8 slices bacon

Lemon pepper seasoning

1 bunch broccolini

Butter and olive oil

CREAM SAUCE:

2 cans cream of chicken soup

1 cup mayonnaise

1 tablespoon lemon juice

1 cup shredded Parmesan cheese, divided

Toss 8 pieces of broccolini in olive oil. Pound chicken breast flat between 2 pieces of wax paper. Sprinkle one side of each breast with lemon pepper seasoning. Wrap 2 pieces of broccolini (1-piece showing out each side) in each breast. Wrap 2 pieces of bacon tightly around each roll. Wrap saran wrap around each roll very tightly and chill for 2 hours to overnight. When ready to cook chicken, preheat oven to 350 degrees. Remove chicken from refrigerator and unwrap. In a skillet over medium heat, heat 1 teaspoon butter and 1 teaspoon olive oil. Add chicken rolls and brown bacon on all sides. Place chicken in baking dish and cover with foil. Bake for 20-25 minutes. For sauce, in a saucepan over medium heat, warm soup, mayonnaise, lemon juice, and ½ cup cheese. Serve over chicken and sprinkle with remaining cheese.

Yield: 4 servings
