GIRL SCOUT DINNER

1 pound lean ground beef
1 yellow onion, sliced
2 large potatoes, scrubbed clean and thickly sliced 3 carrots, peeled and sliced
1⁄2 stick butter, cut into 4 pats
Salt and black pepper to taste

Preheat oven to 350 degrees. Divide ground beef into four patties. Place each on a sheet of heavy-duty foil sprayed with non-stick cooking spray. Top with onion slice, potatoes, and carrots. Top each with a pat of butter and sprinkle with salt and pepper. Fold up two sides of foil and fold ends to seal. Place on a cookie sheet; and bake for 1 hour. Puncture packets with a fork to release steam before opening. Drain liquid before serving.

Yield: 4 servings
