HOMEMADE BISCUITS

3 cups Pioneer Buttermilk Biscuit Mix 

1 stick butter, cut into pieces 

1 cup whole milk 

2 to 3 tablespoons melted butter 

Preheat oven to 450 degrees. In a large bowl, add baking mix and scatter butter over top. Cut butter into mix using a pastry blender or 2 knives. When mixture is very crumbly, pour milk over all and gently mix using a fork. Form dough into a ball and knead 2 to 3 times on a floured board. Let dough rest for 5 minutes. Using a floured rolling pin, roll dough out to 1-inch thickness. Cut dough with a 2-inch biscuit cutter and place on a lightly oiled baking sheet. Brush biscuits with melted butter and place pan in oven. Bake for 15 to 20 minutes or until biscuits are golden brown. 

Yield: 16 biscuits
