1 cup extra-virgin olive oil
2 cloves garlic, chopped
Juice of 2 lemons
1 tablespoon lemon pepper seasonings
¼ cup good mayonnaise
¼ cup capers, rinsed
Salt and freshly ground pepper to taste
In a jar, combine all ingredients and shake until well combined. Check seasonings, adding salt and pepper if desired. Refrigerate until ready to serve with a green salad.
Yield: 1½ cups
