Mixed Up Sweets

Delicious homemade cookies are always in demand. Start with a boxed cake mix and these cookies are a cake-walk to make. You’ll find lots of reasons to bake this year-school parties, neighborhood coffees, dessert buffets-with recipes as easy as these! Some are so simple, you can enlist the children and grandchildren to help. Serve them up on a bed of chocolate chips, or decorate them with a sprinkle of sugar. Any way you make them, they’re a sweet, special treat.

BUTTERSCOTCH COOKIES

1 box yellow cake mix

2 eggs

1/2 cup oil

1 tablespoon vanilla flavoring

1(12-ounce) package butterscotch chips

1 cups chopped walnuts

1 cup shredded coconut

Mix and drip by tablespoons on ungreased cookie sheet. Bake at 350 degrees for 8 to 10 minutes. Makes about 3 dozen.

SWISS CHOCOLATE BITES

1 package Swiss chocolate cake mix

1 eggs

4 ounces Cool Whip

1/2 cup sifted confectioners sugar

Combine cake mix, egg, and Cool Whip. Drop tablespoon of dough into confectioner’s sugar. Roll into a 1-inch ball and place 2 inches apart on a greased baking sheet. Bake at 350 degrees for 10 to 12 minutes. Cool on wire rack. Makes about 2 1/2 to 3 dozen.

STRAWBERRY BITES

1 package strawberry cake mix

1 egg

4 ounces Cool Whip

1/2 cup shifted confectioner’s sugar

Combine cake mix, egg and Cool Whip. Drop tablespoon of dough into confectioner’s sugar. Roll into a 1-inch ball and place 2 inches apart on greased baking sheet. Bake at 350 degrees for 10 to 12 minutes. Cool on a wire rack. Makes about 2 1/2 to 3 dozen.

FUDGE-PEANUT BUTTER COOKIES

1 (8-ounce) jar chunky peanut butter

2 tablespoons vegetable oil

2 eggs

1 package (21.5 ounces) fudge brownie mix

1/2 cup water

1 (12-ounce) package semi-sweet chocolate chips

1 cup chopped salted peanuts

Beat peanut butter, oil, and eggs. Add brownie mix and water. Stir until moistened. Sit in chocolate chips. Drop tablespoons of dough into an ungreased baking sheet. Place 1/2 teaspoon peanuts on top of each cookie. Bake at 350 degrees for 12 to 14 minutes. Transfer cookies to wire rack to cool. Makes about 3 dozen,.

CHOCOLATE OATMEAL RAISIN COOKIES

1 package pound cake mix

3/4 cup oil

2 eggs

1 teaspoon vanilla

2 cups quick-cooking oats

1 cup chocolate-covered raisins

Combine cake mix, oil, eggs, vanilla and cinnamon. Beat with an electric mixer until smooth. Stir in oats and raisins. Drop tablespoons of dough about 2 inches apart on an ungreased baking sheet. Bake at 375 degrees for 8 to 10 minutes. Transfer to a wire rack to cool completely. Makes about 4 dozen.
