1¼ cup sugar
2¼ cup all-purpose flour
1 tablespoon cinnamon
2 teaspoons baking soda
½ teaspoon salt
½ cup sweetened coconut, shredded
½ cup dark raisins
1 Red Delicious apple, shredded
8 ounces crushed pineapple, drained
2 cups carrots, grated
½ cup pecans, chopped
3 eggs
1 cup canola oil
1 teaspoon vanilla
Preheat oven to 375 degrees. Sift together sugar, flour, cinnamon, baking soda, and salt into a large mixing bowl. Add next six ingredients; stir to combine. In another mixing bowl, whisk eggs, oil, and vanilla. Pour into dry ingredients, and mix well. Spoon batter into greased muffin tins. Fill to slightly above the rim. Bake for 35 minutes or until a toothpick comes out clean. Let cool for at least 10 minutes, then turn out on a wire rack.
