OLD BAY CRAB CAKE
2 tablespoons horseradish
½ cup mayonnaise
1 teaspoon Worcestershire sauce
½ teaspoon Tabasco Sauce
2 eggs
1 teaspoon Old Bay seasoning
1 pound lump crab meat
1¼ cups Panko bread crumbs, divided
Salt and pepper to taste
4 tablespoons oil
In a medium bowl, mix horseradish, mayonnaise, Worcestershire sauce, Tabasco Sauce, eggs, and Old Bay seasoning. Fold crab meat into mixture, then stir in 1 cup of Panko bread crumbs and add salt and pepper to taste. Form into 6 patties. Refrigerate for at least 15 minutes. Heat oil in a large skillet. Place remaining Panko crumbs on a plate. Coat crab cakes with Panko and fry until golden brown, about 4 to 5 minutes per side. Serve with Louis Dressing or Come Back Dressing.
Yield: 6 crab cakes
LOUIS DRESSING
1 cup mayonnaise
¼ cup chili sauce
2 green onions, minced
3 teaspoons lemon juice
1 teaspoon Worcestershire sauce
In a medium bowl, combine all ingredients.
Yield: 1 cup dressing
COME BACK DRESSING
1 cup mayonnaise
1 chopped onion
¼ cup ketchup
⅓ cup oil
½ teaspoon salt
2 tablespoons sugar
2 tablespoons vinegar
½ teaspoon paprika
¼ teaspoon celery salt
Dash of pepper
4 ounces crumbled blue cheese
1 teaspoon dry mustard
In a food processor, blend all ingredients.
Yield: 1½ cups dressing
