In Mississippi, summertime is blueberry time and homemade ice cream time. This is an easy blueberry cobbler recipe that is just perfect with the easiest and most delicious homemade ice cream ever. So, go pick some Mississippi blueberries, make a cobbler, and some homemade ice cream, and enjoy a fabulous summertime dessert!
BLUEBERRY COBBLER
2 cups water
2 cups sugar
1 stick unsalted butter, melted
1½ cups self-rising flour
½ cups solid vegetable shortening
1/3 cup milk
3 cups fresh blueberries
Preheat oven to 350 degrees. In a saucepan over medium heat, combine water and sugar, and bring to a boil for 4 minutes to form a syrup, remove from heat; set aside. Pour melted butter into 8×11-inch baking dish; set aside. In a bowl, stir together flour, shortening, and milk to make a pastry dough. On a floured surface, roll dough into a rectangle. Sprinkle blueberries on pastry. Roll pastry by long sides jelly-roll style. With a sharp knife, cut into 16 slices. Place slices with sides touching into baking dish, and pour syrup over slices. Bake for 45 minutes until lightly browned. Serve with Easy Homemade Vanilla Ice Cream.

EASY HOMEMADE VANILLA ICE CREAM
2 (14-ounce) cans sweetened condensed milk
1 (12-ounce) can evaporated milk
1 cup sugar
2 teaspoons vanilla
Milk
In a bowl, combine condensed milk, evaporated milk, sugar, and vanilla. Add milk to make 1 gallon. Freeze in ice cream freezer according to directions.
Yield: 1 gallon
