FROZEN FRUIT CUPS

Ruth Smith of Brandon brought these delicious fruit cups to me, and I just had to share the recipe. Use them as a salad, light dessert, or even as a fruit Popsicle. They are so delicious and refreshing, just perfect for the warm summer days ahead. Enjoy!

Frozen Fruit Cups

1 (20-ounce) can crushed pineapple
1 (15.25-ounce) can fruit cocktail
1 (16-ounce) package frozen strawberries
1 (12-ounce) can frozen lemonade
1 (12-ounce) can frozen orange juice
1 (2-liter) bottle 7-Up 

With a food processor, purée crushed pineapple in juice; set aside. Next purée fruit cocktail in juice; set aside. Then purée strawberries in juice; set aside. Combine all ingredients. Freeze in cups or Popsicle molds.

Yield: 24-30 servings
