PATTY’S PICK: Peachy Sweet Potatoes

This recipe is a fresh take on the sweet potato casserole that we all love during the holidays. This casserole is so easy and adds the perfect combination of flavors with the addition of delicious sweet peaches, orange zest, and maple syrup. It may just become a new favorite for your holiday table. Enjoy!

PEACHY SWEET POTATOES

3 sweet potatoes, peeled and sliced
½ stick salted butter
1 (29-ounce) can sliced peaches in heavy syrup, not drained
½ cup maple syrup
¾ cup coarsely chopped walnuts
½ teaspoon cinnamon
Zest of 1 orange
1 teaspoon vanilla 

Preheat oven to 400 degrees. Bake sweet potato slices dotted with butter on a greased baking sheet for 20 minutes. Remove from oven, stir, and lower oven temperature to 300 degrees. Bake for an additional 20 minutes until fork tender; set aside. In a nonstick saucepan over medium heat, cook undrained peaches, maple syrup, walnuts, and cinnamon until reduced for 10 minutes. Remove from heat, and stir in zest, vanilla, and sweet potatoes. Serve warm.

Yield: 8-10 servings
