½ cup honey
¼ cup sherry or apple cider
Juice of 1 lemon
3 tablespoons butter
2 teaspoons salt
1 (3- to 3½ -pound) skinless turkey breast
Place all ingredients except turkey in a saucepan; heat until butter melts. Wash turkey, and pat dry; marinate in honey mixture in a Ziploc bag for up to 24 hours. Remove from bag; discard marinade. Prepare a smoker using wood chips that have been soaked in water. When chips begin to smoke and temperature reaches 250 degrees, place turkey on rack; close lid. Smoke for 3-4 hours or until temperature of breast reaches 170 degrees. Let rest for 10 minutes before slicing.
