4 tablespoons butter
¼ cup water
¾ cup plain flour
3 large eggs, room temperature
¼ pound blue cheese, crumbled
1 tablespoon coarse ground salt
Preheat oven to 400 degrees and line 2 baking sheets with parchment paper. In a have-bottomed saucepan, bring butter and water to a boil over high heat. Remove from heat and add flour. Beat mixture with a wooden spoon until mixture leaves sides of pan and forms a smooth ball. Add eggs, one at a time, beating until smooth after each addition. Stir in blue cheese and let sit for 15 minutes. Drop batter by rounded tablespoons on to the parchment paper, 2 inches apart. Sprinkle each ball with salt and bake until golden, about 25 to 30 minutes. Serve warm.
