PARMESAN SALMON & ASPARAGUS

1 bunch fresh asparagus, ends trimmed

1⁄2 stick butter, cut into 6 pats

2 (6-ounce) salmon filets

Salt and black pepper to taste

1⁄4 cup Parmesan cheese

1 lemon, sliced

Preheat oven to 350 degrees. Coat 2 large pieces of heavy-duty foil with nonstick cooking spray. In each, layer half of asparagus, 3 pats of butter, 1 salmon filet, salt and pepper, 1/8 cup cheese, and half of lemon slices. Fold sides of foil over contents and seal ends. Place packets on a cookie sheet; and bake for 18 to 20 minutes or until salmon is cooked through. Puncture packets with a fork before opening.

Yield: 2 servings
