This chocolate cobbler is the perfect sweet ending for any fall or holiday meal. It is so easy to prepare with ingredients you have on hand, and it is absolutely delicious served with ice cream or sweetened whipped cream. Add a festive touch to this velvety cobbler with a small peppermint cane or stick or a rolled cookie, and fresh mint, or berries.
CHOCOLATE COBBLER
1½ cups all-purpose flour
2 teaspoons baking powder
¼ teaspoons salt
10 tablespoons cocoa powder, divided
2 cups sugar, divided
1 cup milk
2/3 cup melted butter
1½ teaspoons vanilla
1 cup light brown sugar, packed
1¾ cups hot tap water
For garnish: small peppermint cane or stick, rolled cookie, fresh mint, or berries
Preheat oven to 350 degrees. In a large bowl, stir together flour, baking powder, salt, 5 tablespoons cocoa, and 1¼ cups sugar. Stir milk, melted butter, and vanilla into flour mixture. Mix until smooth. Pour mixture into an ungreased 8-inch pan. In a separate small bowl, mix remaining ¾ cup sugar, brown sugar, and remaining 5 tablespoons cocoa. Sprinkle mixture evenly over batter in pan. Pour water over top, but do not stir. Bake for 35 to 40 minutes or until center is set. Let stand for a few minutes. Serve with ice cream. Garnish with peppermint cane or stick, rolled cookie, fresh mint or berries.
