My sweet friend Cheryl Sides of Louisiana, originally from Kosciusko, shared this recipe with me years ago, and it is still one of my holiday favorites. My family loves the sweet and tart combination of this nutty fruit dish, and they always request it for Thanksgiving and Christmas. It is a perfect accompaniment for turkey, pork tenderloin, or ham and beautifully displays the Christmas cranberry red and apple green colors beneath a browned crust. Almost like a cobbler, it is also a great dessert served with vanilla ice cream. Cranberry-Apple Delight is delicious when warm from the oven or at room temperature. It is easy to prepare and freezes beautifully. So add a new favorite to your holiday table. Enjoy!
CRANBERRY-APPLE DELIGHT
3 cups chopped unpeeled tart green apples
2 cups raw cranberries
1 tablespoon lemon juice
¾ cup sugar
Preheat oven to 350 degrees. Combine apples, cranberries, lemon juice, and sugar. Spoon into a 9 x 9-inch baking dish that has been sprayed with nonstick cooking spray. Sprinkle with topping.
Topping:
1 stick melted butter
1 cup uncooked oatmeal
½ cup all-purpose flour
½ cup light brown sugar
¾ cup chopped pecans
Combine ingredients, and crumble over apple and cranberry mixture. Bake for 50 to 60 minutes.
Yield: 10-12 servings
