PATTY’S PICK: Date Nut Bread

Date Nut Bread 

2 eggs, beaten 

1 cup sugar 

1 cup all-purpose flour 

1 teaspoon baking powder 

½ teaspoon salt 

¼ cup milk 

1 teaspoon vanilla 

1 (8-ounce) package dates, chopped 

2 cups pecan halves 

Preheat oven to 325 degrees. In a bowl, stir together by hand eggs, sugar, flour, baking powder, and salt. Add milk and vanilla. Stir in dates and pecans. Pour into 2 greased loaf pans or 2 greased small Bundt pans. Bake for 1 hour. Cool, and slice with an electric knife. Freezes well. 

Yield: 2 loaves or 2 small cakes
