PATTY’S PICK: HORSERADISH SAUCE

by Patty Roper

At my house, this Horseradish Sauce is everyone’s favorite sauce for fresh steamed vegetables. By adding spice variations to several recipes, I think this sauce has the perfect blend of flavors, and you can add as much zip as you like with red pepper. This easy-to-prepare sauce is the perfect accompaniment to serve with steamed fresh broccoli, green beans, Brussels sprouts, cauliflower, and carrots. Try it, and I think it will be requested at your gatherings too.

HORSERADISH SAUCE FOR VEGETABLES

½ stick butter, melted
¾ cup mayonnaise
1½ tablespoons horseradish
¼ teaspoon salt
¼ teaspoon dry mustard
½ to 1 teaspoon ground red pepper

In a bowl, using a spoon, combine all ingredients; check seasonings. Serve with fresh steamed, crisp vegetables. (Sauce will keep in refrigerator for 2 to 3 weeks.) It is best served at room temperature.
Yield: 1¼ cups
