This very easy and very delicious appetizer from my book Easy Parties has been everyone’s favorite at all of my book signings. One lady loved it so much that she bought eight books for gifts for her friends so they could have the recipe. (I think she liked the rest of the book as well.) It has only four ingredients mixed together and baked in prepared mini filo shells. It yields 45 tarts and is as delicious at room temperature as it is warm from the oven. It’s the perfect appetizer for a large party or small gathering of friends or accent on a plate with chicken salad. Try it; I think you will enjoy it and maybe even share it with your friends.
MINI TOMATO TARTS
1 (10-ounce) can Ro-Tel tomatoes, drained
1 cup mayonnaise
1 (3-ounce) package real bacon bits
1 cup shredded Swiss cheese
3 (1.9-ounce) packages mini filo shells, thawed
Preheat oven to 350 degrees. Combine tomatoes, mayonnaise, bacon bits, and cheese. Fill shells and bake for 10-15 minutes.
Yield: 45 tarts
Filo shells are avilable in the frozen foods section of McDade’s in Jackson and Kroger.
