My sweet friend Mary Alice Blackman of Flowood shared this Squash Casserole, a Primos family recipe, with me years ago, and it is easy to prepare and delicious. I have tried many other squash recipes and always come back to this one. People who don’t even like squash love this casserole. I have yet to serve it without requests for the recipe. This is the best Squash Casserole. I hope that you will enjoy it as much as I have.
SQUASH CASSEROLE
2 cups cooked yellow squash
1 teaspoon sugar
½ cup mayonnaise
1 tablespoon butter
½ cup chopped onion
¼ cup finely chopped green pepper
1 egg, slightly beaten
½ cup Swiss cheese, shredded
½ stick margarine
½ cup saltine cracker crumbs
Preheat oven to 350 degrees. Cut squash into pieces and boil in water until tender. Drain and blend with sugar and mayonnaise. Spread squash mixture into a 9” x 9” casserole dish. Sauté onions and green peppers in butter until tender. Stir egg and cheese into onions and peppers. Spread mixture over squash. Melt margarine and add cracker crumbs. Spread evenly over top of casserole. Bake 30 minutes.
Yield: 6-8 servings
