PATTY’S PICK: VANILLA ICE CREAM & PECAN PIE COOKIES

My precious friends Gwen McKee and Barbara Moseley have a wonderful Five Ingredient Cookbook with 580 easy recipes. One of my favorites is the recipe for “The Easiest and Best Vanilla Ice Cream.” It is fabulous and so easy, no cooking at all, but tastes just like Grandma’s. It is just perfect for hot summer days. Serve it with their favorite “Pecan Pie Cookies.” Happy summer!

 

THE EASIEST AND BEST VANILLA ICE CREAM

1 pint half-and-half
1 pint whipping cream
1 (14-ounce) can sweetened condensed milk
2 tablespoons vanilla

Combine all ingredients; mix well. Pour into ice cream freezer container; freeze according to manufacturer’s instructions.
Yield: 8 or more servings

 

PECAN PIE COOKIES

1 stick butter, softened
1 cup firmly packed dark brown sugar
1 egg
1 cup all-purpose flour
1 cup chopped pecans

Mix all ingredients together; spoon onto ungreased baking pans; bake at 375 degrees for 12-15 minutes or until brown around edges. Cool 2 minutes in pans, then 10 minutes on rack to cool completely.
Yield: 24 large or 36 small cookies
