I have had several requests for an easy and delicious fish recipe, so we asked our Facebook readers if they had a special one to share. When this recipe came in from Renee Freeman Wilson of Anchorage, Alaska, (originally from Petal), it sounded great and I was eager to try it. I prepared it with tilapia, and everyone who tasted it, loved it and wanted the recipe. It has only a few ingredients and is ready in minutes. It is perfect for guests at a dinner party or just a quick, delicious dinner at home with a salad. Try it and be sure and let us know what you think. RENEE’S FISH
1-11⁄2 pounds white fish filets
2 cups milk
1 cup (1 sleeve, about 30) saltine crackers
2 tablespoons Old Bay Seasoning
1 teaspoon garlic powder
1⁄2 teaspoon ground black pepper
1 egg
1⁄4 cup unsalted butter
For garnish: Fresh lemon slices and fresh parsley
Wash fish and place in a glass bowl of milk and soak in refrigerator for 20-30 minutes. Place 30 crackers in a gallon zipper bag; roll with a rolling pin until all crackers are finely crushed. Add Old Bay Seasoning, garlic powder, and pepper to the crackers. Beat egg until blended and pour onto a shallow plate. Remove fish from milk and discard milk. Dip fish into egg mixture, coating both sides. Place fish directly into cracker mixture coating all sides. Melt butter in a frying pan. Place coated fish filets into pan. Sauté on medium heat until golden brown on both sides. Garnish with lemon slices and parsley. Serve immediately. Yield: 4-6 servings
