Oven-Fried Catfish
1 cup crushed cornflakes
1 cup Oven Fry Seasoned Coating for fish
1 tablespoon chopped pecans
1/2 teaspoon salt
2 pounds catfish fillets
1 cup milk
For garnish: lemon slices and parsley
Preheat oven to 475 degrees. Combine cornflakes, Oven Fry coating, pecans, and salt; set aside. Rinse fillets in cold water, and pat dry. Dip fillets in milk; coat with cornflake mixture. Bake on greased cookie sheet for 15 minutes. Garnish with lemons and parsley.
Yield: 12 servings
Black-Eyed Pea Dip
3 (15-ounce) cans black-eyed peas, drained and rinsed
1 each: green and yellow bell pepper, chopped
1 small purple onion, chopped
1 medium tomato, seeded and chopped
1/4 cup chopped cilantro
1 cup Italian dressing
1/2 teaspoon Worcestershire sauce
Several shakes of dried basil and oregano
Salt and pepper to taste
Combine all ingredients, and mix well. Chill overnight before serving. Serve with corn chips.
Yield: 24 servings
Crunchy Coleslaw
3/4 cup real bacon bits
2 cups shredded cabbage
4 tablespoons chopped green bell pepper
2 tablespoons lemon juice
1/2 cup mayonnaise
2 tablespoons chopped parsley
1 tablespoon grated onion
1/2 cup sesame seeds, toasted
1 cup sliced almonds, toasted
Combine bacon, cabbage, and pepper; set aside. Whisk together lemon juice, mayonnaise, parsley, and onion. Toss cabbage mixture with dressing. Top with sesame seeds and almonds.
Yield: 8–10 servings
Chicken Poppers
15 jalapeno peppers
1 (8-ounce) package cream cheese, softened
Several boneless, skinless chicken breast tenders
1/2 pound bacon
1 bottle sweet and sour sauce
Cut peppers in half, lengthwise. Remove seeds and veins; wash and thoroughly dry. Fill each pepper with a small amount of cream cheese. Cut the chicken into strips to fit inside peppers. Place chicken piece over cream cheese. Wrap . slice of bacon around each stuffed pepper and hold in place with 2 toothpicks. Let toothpicks stick out large end of pepper like a fish tail to pick up the pepper. Place stuffed peppers on baking pan that has been sprayed with nonstick cooking spray. Bake at 325 degrees for 45–50 minutes or until the baconand chicken are done. Brush with sweet and sour sauce.
Yield: 30 servings
White Wine Cake
1/2 cup finely chopped pecans
1 (18.25-ounce) box butter recipe golden cake mix
1 (3-ounce) package instant vanilla pudding
1/2 cup vegetable oil
4 large eggs, room temperature
1/2 cup white wine
1/2 cup water
Preheat oven to 325 degrees. Combine cake mix, pudding mix, oil, eggs, wine, and water with mixer and pour into Bundt pan that has been sprayed with cooking spray containing flour and sprinkled with pecans. Bake for 40–50 minutes or until toothpick comes out clean. Remove cake from oven and place in pan on wire rack. Pour Glaze over hot cake in pan, and allow to soak in for 15 minutes. Remove from pan. Yield: 16–20 servings
Glaze
1 stick unsalted butter, melted
1 cup sugar
1/4 cup white wine
Dissolve sugar in butter. Stir in wine.
